Guys, am I right in saying that Anderson is contracted to us until 2022, if so, why didn't we get him to sign for an extra year on his contract before he went on loan so when he returns he would've had 2 years left on his contract (therefore we could ask for more money if we sold him) instead, he will return with just a year left on his contract?

We can't force someone to sign a contract, we are not in a good position for this scenario, we want to ship out because of the wages and his agent will know that.
